For the Oatmeal
  • 1 1/3 cups steel-cut oats Use steel-cut oats for the best texture.
  • 4 cups unsweetened vanilla almond milk Almond milk can be substituted with other types of milk.
  • 1 1/2 teaspoons vanilla extract Adjust the amount for a sweeter flavor.
  • 1 teaspoon cinnamon Feel free to mix in other spices like nutmeg or ginger.
  • 2 pieces Granny Smith apples, diced and divided Dice half for mixing in, and reserve half for topping.
  • 4 teaspoons brown sugar, for sprinkling Add more if you like it sweeter.

Preparation
  1. Generously spray your slow cooker walls with non-stick spray or line them with a slow cooker liner.
  2. Combine the almond milk, steel-cut oats, vanilla extract, cinnamon, and half of the diced apples in the slow cooker, stirring them together.
  3. Cook on low for 6 to 8 hours, allowing everything to simmer together until the oats are soft and fully cooked.
  4. Before serving, sprinkle with brown sugar and the remaining diced apples for an extra touch of sweetness.

Notes

Leftover oatmeal can be stored in an airtight container in the fridge for up to five days or frozen for up to three months. For a more elaborate breakfast, consider topping with toasted nuts or a drizzle of maple syrup.
