Preparation
- Place the chicken in a 5 to 6-quart slow cooker. Sprinkle with cumin and salt, stirring gently to coat the chicken evenly.
- Pour about 3/4 of the salsa verde over the chicken, reserving the rest for later.
- Cover the slow cooker and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until the chicken is cooked through and shreds easily with a fork.
- Once the chicken is done, shred it directly in the slow cooker using two forks.
- Add the reserved salsa verde and lime juice, stirring to combine and coat the chicken in the sauce. Taste and adjust with more lime juice or salt if needed.
Serving
- Serve warm, topped with warmed tortillas, fresh cilantro, avocado, sour cream, shredded cheese, or sliced jalapeƱo.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
