  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs Adjust based on preference.
  • 1 jar salsa verde (16-ounce) Homemade salsa verde can be used for freshness.
  • 1 teaspoon ground cumin
  • 0.5 teaspoon kosher salt
  • 1/2 lime Juice of 1/2 lime

Method
 

Preparation
  1. Place the chicken in a 5 to 6-quart slow cooker. Sprinkle with cumin and salt, stirring gently to coat the chicken evenly.
  2. Pour about 3/4 of the salsa verde over the chicken, reserving the rest for later.
  3. Cover the slow cooker and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until the chicken is cooked through and shreds easily with a fork.
  4. Once the chicken is done, shred it directly in the slow cooker using two forks.
  5. Add the reserved salsa verde and lime juice, stirring to combine and coat the chicken in the sauce. Taste and adjust with more lime juice or salt if needed.
Serving
  1. Serve warm, topped with warmed tortillas, fresh cilantro, avocado, sour cream, shredded cheese, or sliced jalapeƱo.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
