  • 2 cups cooked rice Use leftover rice for best results.
  • 1 pound chicken breast, diced Can substitute with rotisserie chicken.
  • 1 cup mixed vegetables (carrots, peas, corn) Feel free to substitute with any available mixed vegetables.
  • 1/4 cup soy sauce For a richer flavor, add oyster or hoisin sauce.
  • 2 tablespoons garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons green onions, sliced For garnish.
  • 1 tablespoon sesame oil
  • to taste salt and pepper Adjust seasoning as necessary.

Preparation
  1. In a slow cooker, combine the diced chicken, cooked rice, mixed vegetables, soy sauce, minced garlic, minced ginger, and sesame oil.
  2. Stir everything together until well mixed.
  3. Season with salt and pepper to taste.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and the flavors meld.
  5. Before serving, sprinkle with green onions and give it a gentle stir.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to three months. Reheat on the stovetop or microwave with a splash of water.
