  • 2 lbs beef stew meat Choose cuts well-suited for slow cooking.
  • 4 cups beef broth Can substitute with chicken or vegetable broth.
  • 1 medium onion, chopped
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 3 cloves garlic, minced
Seasonings
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Method
 

Preparation
  1. In a Crockpot, add the beef stew meat, beef broth, onion, carrots, potatoes, and garlic.
  2. Stir in the tomato paste, thyme, rosemary, salt, and pepper.
Cooking
  1. Cover and cook on low for 8 hours or on high for 4 hours, until the meat is tender.
  2. Serve hot.

Notes

Serve with a crusty loaf of bread, over rice, or with a side salad. Store leftovers in an airtight container for up to three days in the refrigerator or freeze for longer storage.
