Slow Cooker Beef Stroganoff

Ingredients
  

For the beef and sauce
  • 2 pounds beef chuck roast, well trimmed and cut into chunks Use a tender cut of beef for best results.
  • 1 tablespoon all-purpose flour or gluten-free flour To thicken the sauce.
  • 2.5 teaspoons kosher salt, divided Season the beef and for cooking.
  • 1 pound mushrooms, sliced Any variety of mushrooms can be used.
  • 1 cup beef broth Adds depth of flavor.
  • 1 teaspoon Worcestershire sauce A key ingredient for savory flavor.
  • 3/4 cup sour cream Adds creaminess to the sauce.
  • 1 teaspoon sweet paprika For an additional flavor boost.
For the noodles
  • 1 pound egg noodles Cook according to package directions.
For seasoning
  • Freshly ground black pepper to taste Enhances the flavor of the dish.
  • 1 medium onion, chopped For sautéing and added flavor.
  • 1 teaspoon olive oil For sautéing the onions.

Method
 

Preparation
  1. Season the beef with 1 1/2 teaspoons of salt, black pepper, and flour.
  2. Heat a large skillet over medium heat, add olive oil and onions, and sauté until softened, about 5 to 7 minutes. Transfer to the slow cooker and wipe the skillet clean.
  3. Increase the heat to medium-high, spray the skillet with oil, and brown the beef, about 2 to 3 minutes on each side. Transfer the beef to the slow cooker.
  4. Add paprika, beef broth, remaining salt, and Worcestershire sauce to the slow cooker; mix well. Top with mushrooms and gently stir.
Cooking
  1. Cover and cook on HIGH for 5 hours or LOW for 8 to 10 hours until the beef is very tender.
  2. About 30 minutes before serving, stir in the sour cream until mixed.
  3. Cook egg noodles according to package directions. Serve stroganoff over the noodles or fold them into the slow cooker just before serving.

Notes

For an elevated touch, garnish with fresh parsley or a sprinkle of paprika. Store leftovers in an airtight container for up to three days, or freeze for up to three months.
