Preparation
- Spray the inside of a 6-quart slow cooker with non-stick cooking spray.
- In the slow cooker, gently toss mixed berries with ½ cup sugar, vanilla extract, and ½ cup of the baking mix.
- In a separate bowl, stir together the remaining 2 ¼ cups baking mix, ½ cup sugar, melted butter, and milk until a soft dough forms.
- Drop the dough on top of the berry mixture in roughly 2-tablespoon dollops, leaving gaps for steam to escape.
- In a small bowl, combine 2 tablespoons of sugar and cinnamon; sprinkle over the dough.
Cooking
- Cover and cook on HIGH for around 3 hours, checking the middle biscuits after 2.5 hours.
- Allow the cobbler to rest uncovered for 15-30 minutes before serving to thicken the juices.
Notes
This cobbler is best served warm. Pairs well with vanilla ice cream or whipped cream. Leftovers can be stored in an airtight container for up to three days and can be frozen for up to two months.
