Ingredients
  

Main Ingredients
  • 2-3 pieces boneless, skinless chicken breasts
  • ½ piece onion, chopped
  • 4 pieces russet potatoes, peeled and diced
  • 16 ounce bag of frozen mixed vegetables
  • 10.5 ounce can cream of chicken soup
  • 10.5 ounce can cream of celery soup
  • 1 cup milk
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon poultry seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
Final Touches
  • 8 count refrigerated biscuits
  • 1 tablespoon butter
  • to taste none Freshly chopped parsley (optional)

Method
 

Preparation
  1. In a 5-6 quart slow cooker, add chicken, onion, potatoes, and mixed vegetables.
  2. In a separate bowl, mix together the cream of chicken soup, cream of celery soup, milk, garlic powder, poultry seasoning, onion powder, and black pepper until well combined.
  3. Pour this creamy mixture over the chicken and veggies, ensuring everything is evenly coated.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 4 hours, until the chicken is tender and easily shreds.
  2. About 30 minutes before serving, shred or cut the chicken into pieces and return it to the slow cooker.
  3. Cut the biscuits into quarters and place them over the mixture in the slow cooker.
  4. Melt the butter and brush it over the biscuits for a lovely golden finish.
  5. Cover and cook for the remaining 30 minutes until the biscuits are cooked through.
  6. Garnish with parsley before serving for a fresh touch.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. This dish freezes well; store the biscuits and the chicken mixture separately. Reheating may require a splash of milk to retain moisture.
