  • 1.5 lbs boneless skinless chicken breasts
  • 14 oz can green beans, drained
  • 6 oz box or package dry stuffing mix
  • 10 oz can cream of chicken soup
  • 0.5 cup sour cream
  • 4 tablespoons unsalted butter, melted
Seasoning
  • 2 teaspoons Italian seasoning (optional)
  • 1 teaspoon dried minced onion (optional)
  • Salt and black pepper, to taste

Method
 

Preparation
  1. Season the chicken with salt, pepper, and any spices you prefer.
  2. Place the seasoned chicken breasts at the bottom of your slow cooker.
  3. Layer the drained green beans over the chicken, followed by the dry stuffing mix.
  4. In a separate bowl, whisk together the sour cream, cream of chicken soup, melted butter, and 1/3 cup of water.
  5. Pour this mixture over the stuffing in the slow cooker and give it a light stir to combine.
Cooking
  1. Cover the slow cooker and cook on high for about 4 to 5 hours, or until the chicken is fully cooked.
  2. Using two forks, gently shred the chicken and mix it with the stuffing before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. This dish freezes beautifully for up to three months. For extra flavor, consider marinating the chicken or broiling the mixture for a crunchy topping after slow cooking.
