  • 2 pounds chicken breasts (boneless)
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 tablespoon taco seasoning (or more, to taste)
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper, to taste

Preparation
  1. Begin by placing the chicken breasts at the bottom of your slow cooker.
  2. Next, spread the chopped onion and bell pepper over the chicken.
  3. In a separate bowl, mix the black beans, corn, diced tomatoes, chicken broth, taco seasoning, salt, and pepper.
  4. Pour this mixture over the chicken and veggies.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours, or on high for about 4 hours.
  6. Once the chicken is cooked through and tender, shred it directly in the slow cooker using two forks and mix it with the other ingredients to combine everything beautifully.
  7. Serve in bowls and garnish with your choice of toppings.

Notes

Consider serving your chicken burrito bowl over rice or quinoa for added texture. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months. Customize spice levels as desired.
