Preparation
- Place all the chicken breast in the slow cooker.
- Pour the chunky salsa over the chicken, followed by chicken broth and the spices: chili powder, cumin, and smoked paprika.
- Set your slow cooker to high and let it cook for about 4 hours.
- Once cooked, shred the chicken with a fork— it should easily fall apart. Allow it to rest for another 10 minutes in the juices for enhanced flavor, and remember to taste and add salt if necessary.
- While the chicken is resting, cook the rice, microwave the frozen corn and black beans, chop the cilantro, dice the avocados, and cut the lime into wedges.
- Begin assembling your bowls. Start with a base of rice, followed by shredded chicken, corn, black beans, and diced avocados. Garnish with cilantro and lime wedges.
- Drizzle each bowl with extra BRIANNAS Cilantro Lime Dressing before serving.
Notes
To store leftovers, use an airtight container and refrigerate for up to three days. For freezing, consider storing the chicken mixture in individual portions.
