  • 2-2.5 lbs skinless boneless chicken breast Can use frozen chicken, may require extra cooking time.
  • 16 oz chunky salsa Feel free to marinate chicken in salsa overnight for enhanced flavor.
  • 1/3 cup BRIANNAS Cilantro Lime Dressing Any zesty vinaigrette can be substituted.
  • 1/2 cup chicken broth Add a splash during reheating if necessary to maintain moisture.
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 4 cups cooked rice Base for the bowl.
  • 2 cups frozen sweet corn Can be microwaved for quick preparation.
  • 1 can (16 oz) low-sodium black beans Can substitute with pinto beans if desired.
  • 3 small avocados Diced for serving.
  • 1/4 cup chopped cilantro For garnish.
  • 1 lime Cut into wedges for serving.

Method
 

Preparation
  1. Place all the chicken breast in the slow cooker.
  2. Pour the chunky salsa over the chicken, followed by chicken broth and the spices: chili powder, cumin, and smoked paprika.
  3. Set your slow cooker to high and let it cook for about 4 hours.
  4. Once cooked, shred the chicken with a fork— it should easily fall apart. Allow it to rest for another 10 minutes in the juices for enhanced flavor, and remember to taste and add salt if necessary.
  5. While the chicken is resting, cook the rice, microwave the frozen corn and black beans, chop the cilantro, dice the avocados, and cut the lime into wedges.
  6. Begin assembling your bowls. Start with a base of rice, followed by shredded chicken, corn, black beans, and diced avocados. Garnish with cilantro and lime wedges.
  7. Drizzle each bowl with extra BRIANNAS Cilantro Lime Dressing before serving.

Notes

To store leftovers, use an airtight container and refrigerate for up to three days. For freezing, consider storing the chicken mixture in individual portions.
