Preparation
- Season the chicken with salt and pepper.
- If your slow cooker has a searing option, heat olive oil directly in it; otherwise, sear the chicken in a skillet for 2-3 minutes on each side.
- Add the chopped onions, carrots, celery, and roasted red peppers into the slow cooker.
- Stir in the garlic, Italian seasoning, and Umami seasoning.
- Pour the diced tomatoes and marinara sauce over the top, stirring everything together.
Cooking
- Cover and cook on low for 4-5 hours or on high for 2 hours, until the chicken is tender and reaches an internal temperature of at least 165°F.
- Taste the sauce and adjust seasoning as desired.
- For garnish, consider adding chopped basil, parsley, or grated Parmesan.
- If you prefer a thicker sauce, leave the cover off during the last 30 minutes of cooking.
Notes
Serve with crusty bread, over rice or pasta, or with a fresh green salad. Feel free to use frozen chicken, but ensure it reaches the required internal temperature.
