  • 2 pounds boneless chicken thighs
  • 1 pound boneless chicken breasts
  • 1 medium onion, chopped
  • 1 cup baby carrots, cut in half
  • 3 stalks celery, chopped
  • 1/2 cup jarred roasted red peppers
  • 28 ounce can diced tomatoes
  • 1 cup marinara or tomato sauce
Seasonings
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons sugar
  • 2 teaspoons Umami seasoning
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder or paste

Method
 

Preparation
  1. Season the chicken with salt and pepper.
  2. If your slow cooker has a searing option, heat olive oil directly in it; otherwise, sear the chicken in a skillet for 2-3 minutes on each side.
  3. Add the chopped onions, carrots, celery, and roasted red peppers into the slow cooker.
  4. Stir in the garlic, Italian seasoning, and Umami seasoning.
  5. Pour the diced tomatoes and marinara sauce over the top, stirring everything together.
Cooking
  1. Cover and cook on low for 4-5 hours or on high for 2 hours, until the chicken is tender and reaches an internal temperature of at least 165°F.
  2. Taste the sauce and adjust seasoning as desired.
  3. For garnish, consider adding chopped basil, parsley, or grated Parmesan.
  4. If you prefer a thicker sauce, leave the cover off during the last 30 minutes of cooking.

Notes

Serve with crusty bread, over rice or pasta, or with a fresh green salad. Feel free to use frozen chicken, but ensure it reaches the required internal temperature.
