Preparation
- Mix 1 teaspoon of salt and pepper together, then sprinkle this mixture over the chicken pieces.
- In a medium skillet, heat the olive oil over medium-high heat.
- Place half of the chicken pieces in the skillet, skin side down. Let them cook until browned, approximately 3 minutes on each side.
- Once browned, set the chicken aside on a plate and repeat with the remaining pieces.
Slow Cooking
- In the slow cooker, add onions, bell peppers, olives, mushrooms, garlic, crushed tomatoes, diced tomatoes, chicken stock, and the remaining 1/2 teaspoon salt.
- Gently nestle the browned chicken into the mixture.
- Cover and cook on low for about 5 hours.
Serving
- Spoon the sauce over polenta, mashed potatoes, or pasta, accompanied by a piece of the braised chicken.
Notes
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days, or frozen for up to 3 months. Reheat gently on the stovetop or microwave.
