  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 medium-sized potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup flour (optional, for thickening)
  • Chopped fresh parsley, for garnish

Preparation
  1. Start by searing the chicken in a hot skillet until it turns golden brown.
  2. Once browned, place the seared chicken, diced vegetables, potatoes, minced garlic, and bay leaves into your slow cooker.
  3. Season it with dried thyme, salt, and pepper, and stir everything to distribute the flavors evenly.
  4. Carefully pour the chicken broth over the mixture. If you prefer a thicker stew, sprinkle in the flour and stir until it thickens.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once done, ladle the stew into bowls and garnish with fresh parsley.

Notes

Serve the stew with crusty bread for dipping or over a bed of rice. It also pairs well with biscuits or cornbread.
