  • 1 can (14 oz) pineapple chunks, drained (juice set aside)
  • 1 large bell pepper, preferably red, cut into chunks
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar Adjust sweetness with different types of sugar.
  • 2 tablespoons ketchup
  • 2 tablespoons cornstarch
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon minced garlic Freshly minced garlic enhances flavor.

Preparation
  1. Start by placing the chicken thighs at the bottom of your slow cooker, overlapping them as little as possible for even cooking.
  2. Add the pineapple chunks and bell pepper pieces on top of the chicken.
  3. In a separate bowl, whisk together the reserved pineapple juice, soy sauce, brown sugar, ketchup, cornstarch, ginger, salt, pepper, and garlic to create a sauce.
  4. Pour this sauce over the chicken and veggies, ensuring everything is well-coated.
  5. Cook on low for 4 to 4.5 hours, or until the chicken is tender enough to shred with a fork.
  6. Serve the flavorful chicken over a cooked bed of rice for a complete meal.

Notes

For best results, ensure the chicken is submerged in the sauce. Marinating the chicken in sauce a few hours prior enhances flavor. Try adding snap peas, carrots, or red pepper flakes for variation.
