  • 2 tablespoons salted butter
  • 1 cup sweet onions, minced (such as Vidalia)
  • 3 cans (15-ounce) whole corn kernels, drained
  • 1/2 cup heavy cream
  • 2 teaspoons sugar
  • 1 teaspoon garlic powder (optional)
  • 1/4 teaspoon dried thyme
  • 1 leaf bay leaf
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup grated parmesan cheese

Method
 

Preparation
  1. Start by heating a skillet over medium-high heat. Add the butter and allow it to melt completely.
  2. Once melted, toss in the minced onions and add a tiny pinch of salt. Sauté the onions for about 4-5 minutes until they soften and turn translucent.
  3. Transfer the sautéed onions into the bowl of your slow cooker, followed by the corn, heavy cream, sugar, garlic powder (if using), dried thyme, bay leaf, and a pinch of cracked pepper if desired.
  4. Place the cubes of cream cheese on top of the mixture. Cover and cook for 2 hours on high or 4 hours on low, stirring every hour.
  5. Near the end of the cooking time, stir in the grated parmesan cheese. Taste and adjust seasoning with extra salt, pepper, or sugar.
  6. Remove the bay leaf before serving. You can transfer the creamed corn to a serving dish or serve it directly from the slow cooker.

Notes

For extra flavor, consider using fresh corn instead of canned. To reduce calories, substitute with lower-fat cream cheese, though this may affect creaminess. For a creative twist, add diced jalapeños or a splash of lime juice.
