- Start by heating a skillet over medium-high heat. Add the butter and allow it to melt completely.
- Once melted, toss in the minced onions and add a tiny pinch of salt. Sauté the onions for about 4-5 minutes until they soften and turn translucent.
- Transfer the sautéed onions into the bowl of your slow cooker, followed by the corn, heavy cream, sugar, garlic powder (if using), dried thyme, bay leaf, and a pinch of cracked pepper if desired.
- Place the cubes of cream cheese on top of the mixture. Cover and cook for 2 hours on high or 4 hours on low, stirring every hour.
- Near the end of the cooking time, stir in the grated parmesan cheese. Taste and adjust seasoning with extra salt, pepper, or sugar.
- Remove the bay leaf before serving. You can transfer the creamed corn to a serving dish or serve it directly from the slow cooker.
Notes
For extra flavor, consider using fresh corn instead of canned. To reduce calories, substitute with lower-fat cream cheese, though this may affect creaminess. For a creative twist, add diced jalapeños or a splash of lime juice.
