Ingredients
  

Main ingredients
  • 1 lb Ground beef Can substitute with ground turkey or chicken
  • 2 cups Elbow macaroni Can switch out for other pasta shapes or whole grain options
  • 1 can Diced tomatoes Use tomatoes with juices
  • 1 cup Beef broth For a lighter version, use vegetable broth
  • 1 each Bell pepper Diced, can substitute with other vegetables
  • 1 each Onion Diced
  • 2 cloves Garlic Minced
Seasonings
  • 1 tsp Salt Adjust to taste
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Italian herbs Or use oregano and basil

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  2. In your slow cooker, combine the browned beef, diced tomatoes (with juices), beef broth, diced bell peppers, onion, garlic, and assorted seasonings.
  3. Stir everything together until well mixed.
Cooking
  1. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  2. About 30 minutes before serving, add in the uncooked elbow macaroni, stirring gently and covering again until the pasta is tender.

Notes

Serve hot, garnished with fresh parsley and cheese, if desired. Pairs well with crusty bread or a salad. Can be prepared in advance and stored in the refrigerator.
