  • 2.5 lbs boneless skinless chicken thighs or breasts
  • ½ cup soy sauce
  • ½ cup honey
  • 2 tablespoons tomato paste
  • 1–2 tablespoons cornstarch use more for a thicker sauce
  • 1 tablespoon sriracha
  • 1 tablespoon rice vinegar
  • ½ teaspoon toasted sesame oil
  • 6 cloves garlic, minced
Toppings
  • Chopped parsley, cilantro, or green onions
  • Sesame seeds

Method
 

Preparation
  1. Place the boneless chicken thighs or breasts into your 6-quart slow cooker.
  2. In a medium bowl, whisk together the soy sauce, honey, tomato paste, cornstarch, sriracha, rice vinegar, toasted sesame oil, and minced garlic until smooth.
  3. Pour the honey garlic sauce over the chicken, making sure it is evenly coated.
Cooking
  1. Cover and cook on low for 5 to 6 hours or on high for 4 hours, until the chicken is done when it reaches an internal temperature of 165 degrees F and is fork-tender.
  2. Remove the chicken and either slice or shred it using two forks.
  3. Return the chicken to the slow cooker and toss it in the delicious sauce.
Serving
  1. Garnish with green onions and sesame seeds before serving.

Notes

For optimal flavor, try marinating the chicken in the honey garlic sauce for a few hours before cooking. You can add different veggies, such as bell peppers or snap peas, during the last hour of cooking.
