Main Ingredients
  • 8 oz lo mein noodles Can substitute with spaghetti or rice noodles.
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 cup snap peas
  • 1 cup cooked chicken or beef (sliced) Can substitute with tofu or shrimp.
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves minced garlic
  • 1 teaspoon grated ginger
  • to taste salt and pepper
  • to garnish green onions

Method
 

Preparation
  1. Cook the lo mein noodles according to the package instructions, then drain and set aside.
  2. In your slow cooker, combine the sliced carrots, bell peppers, snap peas, and your chosen protein.
  3. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, minced garlic, grated ginger, and season with salt and pepper.
  4. Pour the sauce mixture over the vegetables and meat in the slow cooker and toss everything to coat evenly.
Cooking
  1. Cover and cook on low for about 4 hours or high for 2 hours, allowing the flavors to meld.
  2. Once cooked, add the previously prepared noodles to the slow cooker, tossing gently to mix everything together.
Serving
  1. Serve warm, topped with sliced green onions for a fresh finish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 2 months.
