- Grease the bottom and sides of the slow cooker insert using melted coconut oil, cooking spray, or canola oil to ensure the oatmeal doesn't stick.
- Combine the steel-cut oats, water, milk, maple syrup, brown sugar, cinnamon, vanilla, and salt in the slow cooker.
- Cover with the lid and cook on LOW for 6 hours for a firmer texture or 8 hours for a softer result, or on HIGH for 3-4 hours.
- Serve the oatmeal warm and top with extra maple syrup and your choice of chopped nuts.
Notes
Store leftover oatmeal in an airtight container in the refrigerator for up to 5 days. Reheat with a splash of milk or water. For added flavor, toast the steel-cut oats before adding liquid ingredients. Use pumpkin pie spice or dried fruits for creative variations.
