Preparation
  1. Grease the bottom and sides of the slow cooker insert using melted coconut oil, cooking spray, or canola oil to ensure the oatmeal doesn't stick.
  2. Combine the steel-cut oats, water, milk, maple syrup, brown sugar, cinnamon, vanilla, and salt in the slow cooker.
  3. Cover with the lid and cook on LOW for 6 hours for a firmer texture or 8 hours for a softer result, or on HIGH for 3-4 hours.
  4. Serve the oatmeal warm and top with extra maple syrup and your choice of chopped nuts.

Notes

Store leftover oatmeal in an airtight container in the refrigerator for up to 5 days. Reheat with a splash of milk or water. For added flavor, toast the steel-cut oats before adding liquid ingredients. Use pumpkin pie spice or dried fruits for creative variations.
