Preparation
  1. Start by placing the chicken thighs in the slow cooker.
  2. In a separate bowl, mix together the pineapple juice, soy sauce, honey, garlic, ginger, and a dash of salt and pepper.
  3. Pour this flavor-packed mixture over the chicken thighs in the slow cooker.
  4. Add the chopped bell pepper and sliced onion on top of the chicken.
Cooking
  1. Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  2. Serve the Sweet Hawaiian Chicken over a bed of rice or noodles to soak up the delicious sauce.

Notes

For best results, sear the chicken thighs in a pan for a few minutes before adding them to the slow cooker. Store leftovers in an airtight container for up to three days. This chicken freezes well for up to three months.
