Ingredients

For the soup
  • 1 lb Foster Farms Organic Ground Turkey
  • 1 Sweet White Onion (peeled and chopped)
  • 3 Carrots (chopped)
  • 2 Celery Stalks (chopped)
  • 1/2 head Cabbage (chopped)
  • 14 oz Can Organic Low-Sodium Diced Tomatoes
  • 1 tbsp Tomato Paste
  • 2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Sea Salt
  • 1/2 tsp Fresh Cracked Pepper
  • 1/2 tsp Smoked Paprika
  • 32 oz Organic Low Sodium Chicken Broth

Method

Cooking
  1. Start by adding the ground turkey to a large sauté pan over medium-high heat. Break it apart with a spatula and add the chopped onions.
  2. Cook and stir until the turkey is cooked through and the onions are translucent.
  3. Transfer the cooked turkey mixture to a 6-quart slow cooker.
  4. Add all remaining ingredients: chopped carrots, celery, cabbage, diced tomatoes, tomato paste, spices, and chicken broth.
  5. Cook on high for 4 hours or on low for 6-7 hours.
  6. After cooking, taste and adjust the seasoning with salt and pepper as needed. Serve hot.

Notes

For an extra depth of flavor, consider adding a splash of lemon juice just before serving. This brightens up the dish and enhances all the savory elements. Additionally, feel free to experiment with fresh herbs like dill or thyme for a different flavor profile.
